Italian Cooked Cod
Preheat oven to 190ºC
4 Cod fillets*
2×15 ml sp Olive Oil
1 med Onion chopped
2 cloves Garlic crushed
14oz can Tomatoes chopped
5oz Mushrooms sliced
1x15ml sp freshly chopped Basil
Juice of half a lemon
8 Black Olives
Salt & Black Pepper
Heat the oil in a saucepan and fry the onion until soft. Add the garlic, tomatoes and season with salt & black pepper. Bring to the boil, then reduce the heat and simmer for 15 minutes, stirring occasionally. Add the mushrooms and simmer for a further 10 minutes until the sauce thickens and then stir in the basil. Place the fish in an ovenproof dish, season & sprinkle with a little lemon juice. Spoon the sauce over the fish and place in the centre of a preheated oven for 25 minutes.
Serves 4
Serve with boiled potatoes and a green salad.
* Any white fish will do if cod is not available.

I love Cod and Parsley Sauce .
We have a fishmonger who drives down from up north (Grimsby I think) and he says that locally to him people eat haddock rather than cod….
@Steph – You can nibble on the olives as you cook the dish, add them to the dish or use them for decoration as you serve it! Leave a few for me please!

we have a great chip shop nearby (run by Italians) so this will make the perfect accompaniment to her recipe.
My costume may need some adjustment afterwards 😳

@Steph – I have a friend who buys her chips from a Chinese take away. She swears they are far better than home made or from the local chipper!
Yum. I actually have some nice silver dory in the freezer so tonight’s heart friendly dinner awaits! Sounds delish. I use tiny chat’s potatoes (new potatoes although they’re available all year here) they go sooooooo well with fish.

Maybe that’s what has been the matter all these years.Big hard lumps have always been my problem…….
Talk of chips …the best are fried in lard…preferably beefy! Go to Whitby if you wan the very nest!
BTW Fish and Chips were invented by the Italians I believe…
I don’t particularly like fish but for some reason this recipe sounds fantastic….i have the greatest urge to buy fish and cook it!
