This is a simple tasty dish, for sharing on a cold winter evening.
I had a friend who would ask “What is for dinner?” before choosing the bottle of wine to open for our meal. If I said “Meatloaf” He always replied “Right, a cheap dinner so a cheap bottle of wine!”
The wine was always good, the dinner tasty and the chat interesting.
Lemon Meat Loaf
Preheat oven to 220°C
12ozs Minced Beef
Breadcrumbs
2 tablespoons Lemon Juice
1 Egg
1 Onion chopped
Water to moisten
For Sauce
Tomato ketchup
Mustard
Lemon Juice
Cloves
All Spice
Mix the beef, breadcrumbs, egg lemon juice, onion and water in a bowl then form in an oval shape.Place in ovenproof dish cover and bake for 10 minutes.
Mix the ketchup, mustard, allspice and lemon juice.Remove meatloaf from oven.Pour over meatloaf reduce oven to 190°C and cook for further 35 minutes.
Enough for 3 Portions.
To serve: Fresh spaghetti, noodles or crusty or garlic bread.
