Food Monday ~ Chorizo Wrapped Chicken Breasts

A quick and easy dish today.

Chorizo Wrapped Chicken Breasts.
Preheat the oven to 200°C

Make a slit in each chicken breast to form a pocket.  Stuff them with garlic and mozzarella, then wrap them in sliced Chorizo.  Place them on a greased baking tray and bake in the oven for 25 minutes.

Roast some red peppers, spring onions and tomatoes in olive oil and ground black pepper.  Serve with spaghetti and lots of browned pine nuts.

    Forget the recipe and tell me how to pronounce one of the ingredients: CHORIZO…. I looked for help as you can plainly see below; but I am still puzzled. How do you say Chorizo?????

    Phonetic pronunciation only,please! Don’t confuse me further…

    To begin with you will need a flamboyant and sexy Flamenco dress with matching accessories of large earrings, hair combs and flowers. Don’t forget the Castanets!

    All I really needed was the pronunciation, GM. I was already in my usual Monday morning outfit of Flamenco dress with matching accessories of large earrings, hair combs and flowers.. The castenets are on the piano waiting for Jose to come in and give me my weekly dance instruction and cigar rolling lesson..

    Oh that’s creepy…. I made reference to cigar rolling to someone the other day…they’re in Cuba at the moment…she had no idea what I was talking about… But for real cigar rolling a Flamenco dress is just not right…..

    Instead of a Flamenco dress you could throw on a Mexican serape and put a sombrero on your head and have the chorizo for breakfast with eggs. (Sorry, I don’t like it.)

    Sounds quite delicious. Pity I am not a great non vegetarian cook, but I definitely intend to give this a shot someday, perhaps when I can visit Europe.

    @Nancy – I was tied up yesterday and the toyboy wouldn’t let me go, so I was unable to get back to you. I hope you fed Jose his lunch. Now go put that sausage away, you have played with it long enough.

    @Magpie – I think this is becoming a creepy crazy place! There is a hill near me…. I wonder if we could roll cigars there 🙄

    @Darlene – I am about to have breakfast as you describe!

    @Baino – It is possible to buy Chorizo that is about 2″ in diamater. Slice the sausage thinly at an angle of 45º rather than straight across and the end result gives a bigger slice. Overlap the slices on the chicken, just like you would do with bacon.

    @Ashok – I am sure you cook some tasty vegetarian meals.
