My sister-in-law gave me this recipe many years ago. It is always greeted with cries of “Oh Yummy!” So to celebrate Maire and my brother becoming Grandparents for the first time, this weekend, and with delightful thanks to my niece and her husband for providing me with another grandniece, I share this cake recipe. I wish them all well and great joy with the new baby.
Preheat the oven to 180°C
8ozs crushed Nice Biscuits
1 lb Cream Cheese
1 teaspoon Vanilla Essence
6ozs Caster Sugar
1 dessertspoon Lemon Juice
1 teaspoon Lemon rind
Cream & grated nutmeg to decorate
Melt butter & mix with crushed biscuits. Press into an 8” tin with a removable base.Beat eggs & sugar as for sponge.Beat Cream Cheese & vanilla essence.Add cheese spoon by spoon to egg mixture beating continually then add lemon juice & rind.Pour into cake tin over biscuit base.Bake for 25-30 minutes.Refrigerate overnight.Decorate with cream & sprinkle with nutmeg before serving.
Now this I like. I will save it for a later date. We don’t eat a lot of puddings on account of ever expanding waistlines and have had a few last week with visitors from abroad and birthday lunches.

Grannymar, here is a request from a bachelor cook. Suggest something that can be made quickly in the Microwave Oven! Something sweet, needing just mixing a whole lot of things together in a bowl, sticking it in and zapping the whole caboodle to get a delicious sweet dish fit to be eaten by my father!
Rumuuser try this
* 4 tablespoons self-raising flour
* 3 tablespoons sugar
* 2 tablespoons cocoa
* 1 egg
* 3 tablespoons nonfat milk
* 2 tablespoons margarine
Mix flour, sugar and cocoa: Spoon in 1 egg.
Pour in milk and oil, and mix well.
Put in microwave for 3 minutes on maximum power. (1000watt)
Wait until it stops rising and sets in the mug.
Tip contents out of mug onto saucer and enjoy with cream jam or yoghurt yum!
congrats to all GM. I have a little grandniece (4) that I grandparent due to lack of grandparents in her life and she gives me so much joy. I spent past weekend with her.
Recipe sounds to die, but I stay away from desserts as I don’t have an OFf button.

I like the sound of this baked cheesecake and will be giving it a go next time we cook for others. Like Rhyleysgranny above, we try not to eat too many puddings but as I love to bake, I do make them for others or to share. 🙂
It has been a few years since I made this, it always went down well. Apart from living alone and seldom entertaining these days, have to avoid dairy products so it only appears for family groups or pot luck lunches.
