Food Monday ~ Lazy Crumble

I am feeling lazy today and taking it easy.  It is after all a Bank Holiday in Auntie Elly’s house, so George and I will be putting our feet up.  For goodness sake don’t tell yer wan, or she will have us both frog marching round the block.  I suppose we could cheat and jump on a train to Galway!

In the meantime…. a little something to keep you going

Lazy Crumble
Preheat the oven to 200°C

Any available fruit such as – apple, blackcurrant, gooseberries, loganberries, plums, raspberries or rhubarb will do for this.

Place fruit of your choice in a greased ovenproof baking dish.

For the topping

  • 4 oz. butter
  • 3 oz good quality Muesli
  • 2 oz. Demerara sugar
  • 2 oz. Coconut (optional)

Melt butter in saucepan. Add other ingredients and stir over heat for a few minutes. Then sprinkle on top of the fruit and bake in oven for 30 minutes.

To Serve: Vanilla ice cream, whipped cream or thick natural yoghurt.

    Gaelikaa, You can always try a variation of your own, with fruit that is easily available to you. Let me know if you come up with a good combination.

    Serve with clotted cream made from Guernsey milk….

    Try thinly sliced peaches or nectarines or apricots (fresh preferably) with a bit of apple juice or orange juice….. or layer them with orange segments….Throw in a splash of orange liqueur..or more.

    Blue berries with any of the other berries (Fruits of the Forest.. if you want to be posh)… use as little sugar as possible so that you keep the sharpness of these.

    Add ginger to the Rhubarb and Elderflower cordial to the Goose berries…

    I know it sounds nice and I am sure plenty of people will enjoy it.

    Darlene – Do you have a Microwave with a grill? If so you could cook it on a Microwave/Grill combination setting set to medium for about 15 minutes.
