Food Monday ~ Parma Fish with Tomatoes & Basil

No!  No!  No!  I did not go all the way to Parma for a fish supper, but I thought you might like this one.

Parma Fish with Tomatoes & Basil
Preheat the oven to 210 °C

4 thick fillets of any white fish.
4-8 basil leaves.
4 tomatoes sliced in four.
8 slices of Parma ham.*
Freshly ground black pepper.
Sliced lemon to garnish.

Season the fish with the freshly ground pepper and top with basil leaves and tomato slices.Carefully wrap with Parma ham and place on an oiled baking tray.Cook for about 15-30 minutes, depending on the thickness of the fish, until the flesh is opaque.

Serve with a squeeze of lemon, a salad and fresh crusty bread.
Serves 4

* or use 12 slices of pancetta instead of Parma ham.

    I had a rather good Caribbean Fish Stew last Monday….sweet and (in my version) spicy….

    Chicken and ham is a classic Baino.. use chicken breasts, skinned, or boned out thighs stuff, then roll, the breasts or thighs….

    I’m always looking for new ways to make white fish more tasty but I would never have thought of using parma ham.

    Gaelikaa – I remember when I lived in Germany many moons ago, I longed for items just because they were unavailable. Later when I went to see Elly either in Scotland or in France, I always had a list of ‘Please bring’s!

    Baino – Would you not try the fish? Chicken would work too… with the Parma ham, but not the fish! 🙄

    Magpie – Caribbean Fish Stew! Now that sounds interesting.
