Avocados and….
Avocados make a simple starter or lunchtime snack, ideal for this time of year.
Simply halve avocados lengthways, remove stone, brush flesh with lemon juice to prevent browning and top with one of the following:-
Dice a red-skinned apple and mix with shredded celery, chopped walnuts and a squeeze of orange juice.
or
Quarter cherry tomatoes and mix with finely cubed mozzarella or feta cheese and freshly chopped basil. Toss in olive oil and a little white wine vinegar.
or
Mix cooked peeled prawns with mayonnaise, a little grated lemon rind and a drop of lemon juice. Season with ground black pepper.
Serve with a little lettuce and crusty bread.
Love avocados. The last one with the prawns is a favourite in our house. I need to try the other two.

I love avocados so delighted to get some new ideas on how to serve them.
My favourite filling to date is fresh crab meat mixed with chopped parsley, mayonnaise/lemon juice and lots of freshly grated black pepper.
I think they’re love em or hate em food. I just love them, we have avocado in lieu of butter on a sandwich, sliced in hamburgers and burritos or just as you suggest here although I’ve never done the apple and walnuts which sound delish.
Steph – It is always nice to find a new way to serve an old favourite.
Baino – Well, as you know I never butter my bread, but I have been known to use avocado to make a moist sandwich.
