Food Monday ~ Sauce for your Chips

Do you shake a blob of tomato sauce on you chips, or eggs & bacon?  I know people who cannot live without a bottle of Tomato sauce in the fridge.  Have you ever thought of making it?

On my journey down memory lane with this old cookery book, I found a recipe for tomato sauce.  I will reproduce it here.

Tomato Store Sauce

3 lbs red tomatoes
1 small onion
1 clove or more
10 peppercorns
1 bay leaf
1 blade of mace
1 dessertspoon salt
½ pint vinegar
3 ozs sugar
Cayenne

Cut the tomatoes in halves and chop the onions.  Place all the ingredients, except the sugar and the cayenne, in a pan and simmer for 1 hour.  Pass through a sieve, return to the saucepan and boil hard for a few minutes to reduce to a thin cream.  Add the sugar and cayenne.  Pour the sauce into bottles.  When cold, cork tightly and store.

    Steph – I have yet to find a recipe for mayonnaise. If I do will you promise to make it?

    here is my recipe for mayo:

    2 egg yolks
    12 fl oz (340 ml) of vegetable or olive oil
    1 – tbsp of lemon juice or white wine vinegar
    1 – 2 tsp of Dijon mustard
    salt and pepper

    Using food processor drop in the eggs and pulse lightly, then slowly add the oil while pulsing. Drop in the lemon juice and seasonings.

    Done.

    Keeps in airtight jar in fridge for 5 days.

    You don’t happen to have a recipe for the old fashioned chili sauce my mother used to make?
    it was like the tomato sauce but there were additional ingredients.

    WWW – I found a recipe for mayonnaise, but it seems more complicated than yours, which seems easy peasy. No sign of a chilli sauce yet but give me time.

    With potato chips I like sauce to go with, a habit of late. Making sauce, well it’s beyond me, but like most who’re lazy with making any foodstuff I’m among the first to sample another’s effort with food 🙂

    The best tomato ketchup I ever tasted was on a train journey in India. It was more orange than red and I suspected was train- or at least hand- if not home-made! I’m borrowing your recipe! We make our own yogurt with a thermos, maybe we can use not quite red tomatoes and make a great tomato ketchup.
