Food Monday ~ Coconut Lemon Bars

Coconut Lemon Bars
Preheat the oven to 170°C

Base:
6 ozs plain flour
4 ozs soft butter
1½ ozs icing sugar

Topping:
2 ozs desiccated coconut
5 ozs granulated sugar
½ teaspoon salt
½ teaspoon baking powder
Grated rind & juice of 1 lemon

Mix the flour, butter and icing sugar and press into a greased Swiss roll tin.  Bake for 10-15 minutes.
Meanwhile beat remaining ingredients together.  Pour over the base and continue to bake until the top is set and a light golden brown.
Cool and slice into bars.

    Gaelikaa – I would not survive without an oven. I pop in a meal or some baking and then I am free to do something else while it cooks or bakes!

    I prefer the term ‘desecrated coconut’ myself. I wish I could make these and be civilized but I’m afraid I would tip my head back and shove them all down at once.
    And then make more.

    Oh dear! There’s only two ingredients in that recipe that I allow myself. Lemon juice & coconut. 🙁

    Alice – Simple to make and it hits the sugar spot for me.

    BHB – You seem to be on a very strict diet. I am on a sea food diet… better make that A See Food diet! 😆

    When you get to be my age you try to do it right. No animal fat [well little], no refined sugar, only whole grains, did you know baking powder is bad too–jeez!, no salt because what’s already there like in tomato sauce, might cause high blood pressure.

    BHB – At my age I decided to forget the diets and to eat, drink and laugh my way through each day. The one nod I give to ageing is to put my shoes or slippers in a neat pair before climbing into bed. If I don’t wake up then whoever finds me…..

    Eat, Drink & make Merry (my sister-in-law’s name) is not a bad philosophy.

    Last night my husband told me that exercise didn’t make for longevity, only makes you feel better at the time. WHAT!!! I’ve not been bike/hike/babe to only FEEL better. But it does keep the weight down so you can eat, drink & make merry more.

    ‘whoever finds me…’ will know that you are a neat person. I have a friend who has a drawer full of lipsticks. (She has exceptionally curvy lips.) She told me to destroy that if she didn’t wake up one morning.

    BHB – I would hate to be frugal with a meal one day only to find my number was up the next day and I had missed my last supper. Exercise, apart from walking, is not my cup of tea. Remember the guy who invented jogging, dropped dead while out jogging.
