Food Monday ~ Braised Orange Celery

Braised Orange Celery
Preheat the oven to 180°C

4 large sticks of celery, diced
1 large carrot, diced
1 onion, diced
300 ml stock
rind & juice of 1 orange
5ml coriander
25g butter
Dice celery, onion and carrot. Heat the butter in a pan, add the vegetables, cover with a layer of greaseproof paper and sweat for about five  minutes.  Add the stock, orange rind & juice, coriander and seasoning.
Place all the ingredients in a casserole dish and braise for 45 minutes or until tender.

    Why do you make me write to you about your recipe every Monday? I never have time to make the stuff you recommend because I am so busy writing to you about it.

    To get down to brass tacks here. After I cover the stuff with the greaseproof paper, how do I work up a sweat? Shall I put on a Richard Simmons aerobic DVD and dance around the kitchen until my arm pits are wet? Or, how about if I put the celery,carrots and
    onion on the cooker and run around the block a couple of times? That should do it.

    Answer quickly because I have already peeled the veggies…..

    Hi Nancy – I hope you not melted with all that sweating while I was busy. 😆 I think it might be a better idea for me to send over a ready made dish of this recipe!

    O.K.,Grannymar, but hold the Coriander…I hate that stuff.

    When will your package arrive? Shall I set the table now or wait till I hear from you?

    Do I still have to sweat or have you already done that?

    Nancy – Stay cool, I am ‘gently glowing’ (that is what my mother said ladies do!) enough for both of us! Celery on way with me attached… I am ready from Florida weather right now!

    Oh, if only that were true….I would love to have you visit me in Florida.

    Maybe you can take one of those Ryanair Flights for 50p..Isn’t that a great price? That is until you add your baggage fee, seat fee, three different government’s fees,credit card using fee,key to the loo fee,access to the boarding ramp fee,bottle of water to last for 10 hours (4 on the tarmac at the airport fee),life vest for the unlikely event of a water landing fee, movie fee (If you choose to not see the movie you will be blindfolded for duration of film. Blindfold fee,and finally a safe landing fee…If the plane crashes the safe landing fee will be removed from your credit card charges..Have a nice flight!

    Nancy – I spent all night at the airport, standing in line, by the time I made it to the gate, I had eaten all the celery. I came home to save my pocket money for more celery and the cost of the next fare. Can you hold off until then?
