Almond Squares
Preheat the oven to 190°C
Pastry to line a traybake tin.
Jam
4 ozs butter
4 ozs Sugar
1 Egg
1 teaspoon Almond Essence
6 ozs oatmeal
Line a prepared tin with pastry and spread a layer of jam over it. Melt the butter and remove from heat. Stir in the sugar, egg and almond essence. Add the oatmeal and mix well. Bake for 20-30 minutes until golden. Cut into squares while still hot and leave in tin to cool.
So, Grannymar, are you trying to knock me out of my usual Monday tirade against some of the ingredients in your recipe?
I looked and looked and can nothing to carp about in the making of these almond squares.
Say, there’s an idea…Do you have any recipes for carp?

I always alter recipes. This one would be:
Whole grain flour mixed with water for tray lining
Raisins, prunes, or dried figs (on top of this)
4 ozs coconut oil
4 ozs fruit
Almond Essence
6 ozs oatmeal
BHB – That sounds interesting.
Explaining the coconut oil—I LOVE coconut flavor & the flavor is strong in the oil, but the oil has the potential of raising your LDL. My health food gurus (a friend & a daughter) & the internet tell me that the health benefits greatly outweigh any LDL risk.
BHB – As my mother used to say: A little of what you fancy, does you good!
We need what we fancy; not to take life too seriously.
If we took the news seriously we’d believe that the earth will be consumed by heat, the oceans will cover cities, & we’ll all hydrogen bomb each other. Sorry 🙁 This isn’t about enjoying food.

I personally can do little to sort out the mess in the world caused by those who make bombs and weapons, others who race round the globe leaving large carbon footprints and crooked politicians and bankers who pocket all they can without thought for those they deny a decent lifestyle.
