Food Monday ~ Avocado Ciabatta

The idea for my lunch today came to me in the middle of the night. I was almost tempted to get up then and there to make and have a midnight feast!

Avocado Ciabatta

Salsa:
1 ripe avocado, diced
1 small red onion, sliced thinly and quartered
1 tomato, chopped
1 lime, juice and zest
A couple of diagonally cut slices of Ciabatta bread

To garnish:
crumbled crisply grilled streaky bacon.

Place the avocado, red onion, tomato & lime in a bowl and stir.
Toast the Ciabatta bread on both sides.
Spoon the salsa mixture on top of the bread and garnish with the chopped bacon.
Enjoy!

    How do you know when an avocado is ripe? I find that often they are under ripe or over ripe. What do I do to choose the right ripeness?

    Avocados do not ripen on the tree or in cold temperatures, so do not store them in a fridge.

    Place unripe avocados in a brown paper bag to ripen. This traps the ethylene gas they produce and helps them to ripen. A firm avocado placed in a paper bag will ripen at room temperature in about three to six days. As the fruit ripens, the skin color will darken.

    Add a tomato, apple or banana to a paper bag in which you have placed an avocado. This will produce more ethylene gas and speed up the ripening process. It will usually only take one to three days to ripen.

    Wow, If I put enough Avacados,tomatoes,bananas and apples in a bag, will they produce enough gas to heat my house?

    Well, it WORKED, GM. I put all the fruit in a bag and left it in the kitchen and the house did warm up BUT the smell was so bad it drove us all out into the cold.

    Unfortunately, we had to go to our local pub and lift a few to forget the stench…Those avacados are murder!

    Sounds like something we’d like here–except for the bacon which we could leave out (for Hubby y’know)–and we have at least four avocados in the ‘fridge just waiting to be eaten up.
