Food Monday ~ Sweet & Sour Pork

Sweet & Sour Pork
Serves 5-6 people

1 kilo pork fillet, cubed
1 medium onion, sliced
15mls tomato purée
30mls soy sauce
300mls vinegar
600mls water
300mls pineapple juice
50g brown sugar
2 carrots, cut in batons
½ red and ½ green pepper, chopped
10mls parsley, finely chopped
25g chopped cucumber
2 apples cored and chopped
seasoning
cornflour to thicken
small tin pineapple chunks
10ml vegetable oil for frying

Heat the oil in a pan and fry the pork. Add the onion and cook for 3-4 mins.
Add tomato purée and stir.
Add soy sauce, vinegar, water, pineapple juice and sugar. Bring to the boil and thicken with the cornflour dissolved in a little cold water.
Reduce the heat and simmer until the meat is cooked.
Add the chopped parsley, fruit & vegetables, cook for a further 5-7 minutes.
Serve with boiled rice.
