Food Monday ~ Juicy Summer Salad

Summertime and the living is easy, so why not make an easy lunch at home or put the  ingredients in a lunch box to eat while sitting in the local park and soaking up a free helping of Vitamin D.

Juicy Summer Salad

A handful of  rocket,
cherry tomatoes
couple of scallions/salad onions
few slices of yellow pepper
red/black grapes
Melon chunks
pineapple chunks,
pinch of curry powder, and mayonnaise, mixed together or dressing of your choice.

Wash and dry the rocket leaves, cherry tomatoes, yellow pepper and grapes and place in a bowl. Clean and slice the salad onions and add to the bowl. Add the melon & pineapple chunks and toss lightly.
Mix the curry powder with the mayonnaise together and stir through the salad.
Serve with crusty French, ciabatta or sour dough bread.

    Except for the curry powder this sounds very good…I don’t care for curry powder, go figure. (I mix my own blend when I make curry which is very seldom. I leave that for the Hubby.) Tom and wine would work well, but I keep small cans of white chicken chunks on my pantry shelf so if I made this salad for lunch for my vegetarian hubby, I might open a can and mix it into my portion.

    Nancy – You add a Toyboy and wine and forget to invite me? I thought you were my friend. 🙁

    Alice – Sometimes I make up a different type of dressing with raspberry vinegar – when I can get hold of it. It would be one of my favourites. Now I wonder if……?

    I love curry powder mixed with mayo. Hubby’s mother used to make that as a vegetable dip. I like your salad recipe, though I have never seen rocket leaves at the market here in Hawaii.

    Gigi – In recent years our selection of salad greens has increased by leaps and bounds. I love salads and they can be different every day.

    Fos – I eat rocket, I use rocket to oil machines and a rocket could launch me into space…. I think that is more than enough for me! 😉

    That reminds me I must post my recipe for winter salad which I have all year round.

    I would add dried cranberries to yours, GM, when soaked in the dressing I can’t describe the taste. 😀

    WWW – I love cranberries and will do as you suggest. Mind you I often stand at the pantry door with the words: ‘What else can I add?’ to a recipe, cranberries chopped dried apricots or sultanas often find their way into salads, stuffing & sweets.
