Food Monday ~ Banana Muffins

Banana Muffins
Preheat the oven to 200°C

3 very ripe bananas
2 tbsp soft butter
1 cup sugar
1 ½ cups flour
1 tsp baking soda
1 cup coarsely chopped pecans or walnuts *
Mash bananas in a bowl and add rest of the ingredients. Stir just until blended.
Pour into greased muffin cases and bake for 20-25 minutes.

* For variety use dried cranberries or cherries.
